Tomato Cucumber Salad


This is a recipe for traditional Mediteranian Greek salad. It’s famous for its health benefits and antioxidant-rich content. It’s incredibly easy to make and it tastes really good and satisfying. It’ll provide you with everything your body needs - carbs, protein, fiber, calcium, iron, potassium, magnesium, Omega-3 and Omega-6 fatty acids and a whole rainbow of vitamins - A, C, E, K, and folate

INGREDIENTS 2 tomatoes 2 cucumbers 1 green bell pepper ½ red onion 10 olives (optional) 2 ½ oz (75g) feta or goat cheese (optional) 1 tablespoon olive oil ½ teaspoon salt ¼ teaspoon pepperMakes 2 portions 352 Calories per portion Protein 15.6g Carbohydrates 25g Fat 23.5g Fiber 5.1g Calcium 427mg Iron 3mg Potassium 906mg

1Cut the veggies into bite-size pieces. Optional: soak the cut onion in warm water while you are cutting the rest of the veggies to take the sharp bite out of them. Rinse them well before adding them to the salad.

2Combine everything in a large bowl, drizzle with olive oil and season with salt and pepper.
