Roasted Fish

Don’t be intimidated by fish, it’s super easy to make and it doesn’t take anything but some oil, a piece of foil and an oven. Any type of fish will work here but you may want to adjust the cooking time depending on the size of it or quantity. Standard cooking time for a pound of fish is 30 minutes.

INGREDIENTS 1lb (1/2 kilo) fresh or defrosted fish olive oil for roasting salt for taste.

Nutritional info will vary with the quantity and the type of fish.

1Create a “foil boat” using foil by turning the edges up all around for easy cleanup afterwards. Place the fish in it, drizzle with oil and salt. You can also add other spices you have on hand to suit your own taste requirements.

2Fold the boat so the fish can be cooked inside it. Roast in the oven at 392°F (200°C) for 30 minutes.

3Open the boat up and, if you have the setting, turn on the top grill in the oven. Cook for another 10 minutes until the fish is nicely browned and the juices from the foil have almost all evaporated. Serve hot with a portion of quinoa and lettuce salad.
